Not a doctor, but my late half-great-uncle-in-law-by-marriage was a lawyer during the great depression and did accept pigs and chickens as payment.

I wonder if I'd have to pay taxes on any chickens I received as payment for goods or services rendered. How would you even calculate it?

Well, being I do have chickens, well, only two at the moment. I would think that paying in eggs would be a better way to go.
1. You don't have to have a chicken coop.
2. You don't have to feed them.
3. You don't have to clean out above mentioned chicken coop. (even two chickens make alot of stinky poop)
4. Paying in eggs is great. They are all organic, cleaned by hand and I will even supply the carton.

Plus, if you bring eggs to the appointment and for some reason are disappointed with the service, you can turn your payment into a gooey protest.
