Since it's Lent, no meat for the Wifey, so today is Pizza day.

I'm making 3 med pies: I thawed 3 'tiles' of frozen homemade dough overnight in the fridge, punched them down, and then re-rose them near the radiator earlier (where it's warm). I'll do two with some of the mushroom confit I made a few days ago, and the third with some oven-dried home grown cherry tomatoes in oil that I'd squirreled away in a pint jar in the back of the fridge this past summer and promptly forgot about. Since one medium pie generously serves 2 people, that should last us most of the weekend.

For those who are curious, I do med-thin crust, using the parchment on pizza stone method ... around 7 mins at 550F works out fine. Deep dish is a whole different animal ... a post for another occasion.

I'd post photos, but resizing stuff below 1mb is a bother.

Eating a Korean Pear. The appearance flavor and texture is kinda like a cross between a jumbo bosc pear and a water chestnut. Very refreshing.

Roasted cauliflour & carrots, and a ham steak in an apple-based sauce. Cauliflour, like celery, is very underappreciated ... just oil up a bunch of large bite sized florettes, hit it with salt & pepper, and roast (cut sides down) on a foil liked baking sheet at 450 for 30 mins until deeply browned and tender. Simple yet awesome. As with broccoli, the core/stem is good too, if you peel and slice it ... arguably the best part of the head.

My first attempt at a bulgar wheat pilaf ... it cooks a lot faster and easier than I was expecting. In fact, it'll probably replace quinoa in my cupboard, since the flavor is cleaner, doesnt need rinsing, and it cooks faster. Cheaper too.

Recipe:

2-3 tbsp sweet butter
1 jalapeno, cored and diced fine
1/2 cup Minced Scallions
1 pint Bulgar Wheat (I think mine was medium coarse)

3 1/2 cups Half Strength Chicken or Vegetable stock, hot
--------
1/2 fl oz lemon juice
1/2 fl oz honey

Directions:
* Mix together the lemon-honey dressing in a small ramekin and set aside.
* In 3 qt pot, sweat Jalapeno in butter over med heat until al dente, add scallions and saute 30 sec until fragrant.
* Raise heat to high and add bulgar wheat (dry), and stir until all butter absorbed and pilaf is fragrant (2 mins).
* Add hot stock, bring to boil, lower heat to medium, simmer 5 mins, stirring occasionally, until liquid absorbed and craters form.
* Cover, remove from heat, let stand 5 mins.
* Upend into a large (3-5L) work bowl, sprinkle with the honey-lemon dressing, and fluff (to shed steam, stop cooking, and separate all the grains. Stir periodically until no longer steamy.
* Serve lukewarm, with additional herbs and/or oil to taste.

Had a random thought at work about whether it was possible to bake an egg inside of a bread roll. First experiment today. Still need some work on timings, but in principal, not bad.
