Black Raspberry Cobbler

Black Raspberry or Blackberry Cobbler

Crust topping:
1-cup flour
1-cup sugar
1 tsp. baking powder
1 egg beaten

Black Raspberry Filling
2 Tbs. flour
¾ cup sugar
4-5 cups fresh berries
1 stick unsalted butter, melted

Preheat oven to 375

In a medium bowl combine flour, sugar and baking powder. Make a well in the center of the dry ingredients and blend in the egg, mixing until the topping is crumbly. Set aside.

To make the filling mix the flour and sugar in a small bowl. Place berries a little at a time in a large bowl and sprinkle gradually with your flour and sugar mixture. Coat gently, the berries are fragile.

Transfer berries to a well-buttered oval casserole or 9 x 9 x 2 baking dish.
Sprinkle topping over berries.
Drizzle melted butter evenly over the crumbly topping.

Place baking dish on a cookie sheet (to prevent spillovers into your oven)
Bake at 375 for 45 minutes.

Oh thanks a I've got to find some black raspberries! :)
